Sweet Potato Pancakes
One large sweet potato, peeled, cut into cubes, and steamed
1 1/2 to 1 3/4 cups Silk Pure Almond or milk
1/4 cup raw honey
1/4 cup melted butter
1/2 teaspoon powdered ginger or 1 tsp. freshly grated ginger
1 1/4 cups whole wheat pastry flour
1 tablespoon baking powder
1 1/4 teaspoon cinnamon
1/2 tsp. salt
1/4 teaspoon ground cloves
1/4 teaspoon cayenne peper
Mash steamed sweet potatoes well. Add SilkPure Almond or milk, eggs, raw honey, melted butter and ginger; stir to blend. Mix flour and dry ingredients in a large bowl. Add sweet potato mixture. Adjust milk level if necesary.
Cook pancakes till browned and cooked through. Top with a shake of cinnamon and toasted pecans.
Makes 12 large pancakes.
