Artichoke Lemon Pasta
The flavor of this pasta recipe is amazing. The combination of lemon, garlic, artichoke…..the crunch of toasted walnuts…..you have to try it! I’ve served this several times and my husband has not once asked “where are the meatballs?” -Barb
1 can small artichokes, quartered anddrained
1/2 cup quartered cherry tomatoes
1 minced clove of garlic
1/8 cup olive oil
1/3 cup sliced calamata olives
juice of 1 to 2 lemons
12 ounces penne pasta (Barilla Plus)
1/2 cup toasted walnuts
shaved parmesan cheese
Cook pasta according to package directions. Drain and return to pot.
In a separate small pan, combine artichokes, tomatoes, garlic, olive oil, and lemon juice. Heat through. Stir this mixture into pasta. Heat if needed.
Serve and top with toasted walnuts and parmesan cheese.
