Best Sweet Potato Fries
2 large sweet potatoes
5 tablespoons olive oil
1 tablespoon sea salt
1 to 2 teaspoons coarsely ground pepper
Preheat oven to 450˙
Peel potatoes or leave on skins –up to you. Cut into wedges ½ to ¾ inch thick. Place potatoes, oil, salt and pepper in a plastic bag; seal and shake. Line a large heavy baking sheet with parchment paper. Place the potato wedges on the sheet, not allowing pieces to touch.
Bake for 25 to 30 minutes, depending on how brown you want them. No need to turn during baking because the use of parchment paper allows the potatoes to brown on the bottoms as they cook. Pat with paper toweling when done and serve.
