Cherry Apple Slaw
Katie: I typically don't eat anything that contains the word "slaw." However, a few weeks ago, Mom and I spent 5 days together doing a website-completion marathon. She made all her best recipes for me, and yes, I was spoiled rotten. I felt like I was at a health spa! This Cherry Apple Slaw turned out to be one of my favorites.
4 cups store-bought cabbage mix of your choice
1 medium Granny Smith apple, cored and chopped
1/2 cup dried cherries or raisins
1 to 2 tablespoons sliced green onion
1/4 cup toasted pecans or cashews
Toss slaw ingredients with dessing. Serve within 24 hours.
1/3 cup olive oil
3 tablespoons cider vinegar
3 tablespoons orange juice
1 tablespoon raw honey
1 teaspoon coarse-ground mustard
1/4 teaspoon salt
