( Barb) The best of snacks: I sweeten my plain greek yogurt with a bit of honey. Then top with this yummy granola. So healthy and good!
3 tablespoons grapeseed or olive oil
¼ cup raw honey
¼ cup coconut palm sugar
½ teaspoon salt
1 teaspoon cinnamon
1 ½ teaspoon vanilla extract
1 teaspoon almond extract, if almonds are used
2 cups rolled oats
1 tablespoon ground flax seed
1 cup chopped nuts (almonds, walnuts or pecans)
½ cup dried cranberries (buy the Craisins package with 50% less sugar)
Preheat oven to 350˙ Line a baking sheet with parchment paper
Place oil, honey, palm sugar, salt, cinnamon and flavorings in a large bowl. Mix with a whisk. Add remaining ingredients. Mix well with large spoon.
Pour the mixture onto prepared baking sheet and spread evenly. Bake, stirring occasionally with a spatula, until golden brown, which will take approximately 45 minutes.
Cool completely and store in an airtight container.
Note: Unsweetened dried apples would be a yummy addition to this recipe
