Clean Eating Oatmeal Waffles
Katie: This recipe was adapted from one given to me by my dear friend, Andrea. Thank you, dear! These are wonderful for a lazy Saturday morning with the fam. Have some waffles, stay in your PJs all day. It's the weekend..why not?

**If you want to go "uber healthy," you can use almond milk instead. (Probably better for cancer patients). |
1 1/2 cups whole wheat pastry flour (Whole Foods, bulk section)
3/4 cup rolled oats 1/2 cup coconut palm sugar (Whole Foods or in bulk from Amazon)* 4 teaspoons baking powder 1 teaspoon ground cinnamon 1 teaspoon vanilla Pinch fine salt 2 large eggs 1 1/4 cup milk** 1/4 cup butter, melted on defrost and cooled 1/4 cup extra light tasting olive oil (or canola oil) Preheat waffle iron to medium-high. Mix dry ingredients in a large bowl (flour, oats, sugar, baking powder, cinnamon, salt), and set aside. In another bowl, stir together melted butter, eggs, oil, milk, and vanilla. Pour 1/2 cup of batter into waffle iron. Bake for about 10 minutes. (Even after mine beeps, I hit it for another 5 minutes or so). You want them nice and brown on the outside, and cooked through inside. Serve with fruit and drizzle with raw honey. (For a tasty variation, top with bananas and toasted pecans. Yum).
