Corn and Black Bean Salsa
Karen: Every time I bring this salsa to a party, I get lots of requests for the recipe! This salad will make a meal if you add fish or chicken. It's also amazing with chips or on a bed of greens.
1/3 cup lime juice (1 large lime)
1/2 cup olive oil
One clove garlic, minced
1 tsp salt
1/2 tsp pepper
dash of ground cayenne (to taste)
1 15 oz. can black beans, rinsed and drained
2 cups frozen corn kernels
2 avocados- peeled, pitted and diced
2 tomatoes, diced
1/4 cup minced red onion
1/2 cup chopped fresh cilantro
Combine dressing ingredients in a screw top jar and shake. Mix with salad ingredients. Enjoy!
