Crustless Apple Pie
Katie: This is one of Mom's latest creations. She and I sampled it for dessert on Thanksgiving weekend....and I actually preferred it to the pumpkin pie (no offense, Aunt Mildred).
4 Fuji Apples, peeled, cored, and cut into 8 wedges each
olive oil (extra light tasting, if preferred)
4 tablespoons raw honey
1 teaspoon cinnamon
1 teaspoon vanilla
1 tablespoon butter
Faux whipped cream
Preheat oven to 475 degrees.
Drop prepared apples into a plastic bag with olive oil. Shake until apples are coated. Place apples on a parchment-covered baking sheet. Roast for 10-12 minutes. The sides facing the baking sheet may brown more quickly, so check and turn mid-way thru cooking. Remove apples from baking sheet and place on paper towels to blot any excess olive oil.
Put honey, cinnamon, vanilla and butter in a small mircowave proof bowl. Heat in 10 second intervals until butter is melted. Stir.
Place apples on serving plate, add dollop of faux whipped cream, pecans and honey cinnamon sauce. Serves 4.
