Decadent Brownie Bites
These brownie bites have a decadent, gooey center and are topped with chocolate sauce and raspberries. Simple enough for a picnic, elegant enough for a dinner party. Enjoy!

Ingredients:
2 ½ tablespoons flax meal 6 tablespoons water 1 -15 oz can black beans, rinsed and drained 3 tablespoons coconut oil (melted) or olive oil ¾ cup cocoa powder 2 teaspoons vanilla extract ¾ cup coconut palm sugar 1 ½ teaspoons baking powder ¼ teaspoon salt ½ cup chopped pecans or walnuts 1 cup fresh raspberries 1 tablespoon butter 2 squares Lindt 70% chocolate Preheat oven to 350˙ Prepare a regular muffin pan with cooking spray. Place flax meal in bowl of food processor and sprinkle with water. Allow to sit for 5 minutes. Add beans, oil, cocoa powder, vanilla, coconut palm sugar, baking powder and salt. Run processor for 3 minutes, scraping down twice. Spoon the batter into the 12 muffin cups, smoothing tops. Sprinkle with nuts. Bake 20-24 minutes, or just until tops are dry. Since there are no eggs, there’s no need to worry about the centers being gooey (Gooey is good!) Remove from oven and let cool for 30 minutes. Gently remove from pan. Place butter and squares of chocolate in a small bowl. Melt in microwave at 30% power, stirring after 30 second increments. Place a few raspberries on top of each brownie and drizzle with melted chocolate. |
