Garlic Goddess Salad
Katie: The first time I tried this salad, I was at a Lithuanian dinner party in Chicago with some dear friends. As soon as the guests around the table had eaten what I considered their fair share, I grabbed the salad and swiftly finished it off. Straight from the serving bowl. (Don't tell my mom...those etiquette classes were expensive).

3 cups romaine lettuce, torn
2 red bell peppers, cut into 1 inch rectangles 3 carrots, sliced into rounds 1 cup raw almonds (whole or sliced) 1/2 cup feta cheese 1 cup garlic sesame sticks Mary Beth's Garlic Dressing Dressing Option #2: Annie's Naturals Roasted Garlic Dressing (Whole Foods) Note: This salad is easier to eat if veggies are sliced into bite-sized pieces. |
