Mediterranean Tuna Melt

Ingredients:
1 (2.6 oz.) package tuna packed in water 1 tablespoon olive oil 1 teaspoon whole grain mustard ¼ cup kalamata olives, chopped 1 tablespoon red onion, finely chopped 1 whole grain English muffin, split 3 cherry tomatoes, sliced salt and pepper to taste 2 slices swiss cheese, trimmed to 3"x3" squares ¼ cup toasted walnuts, chopped Preheat oven to 375. Place tuna, olive oil, mustard, olives, and red onion in a small bowl and stir until combined. Place the English muffins on a baking sheet. Spoon the mixture onto each muffin, pressing it in place. Layer on the sliced tomatoes and sprinkle with salt and pepper. Bake for 6 minutes. Remove baking sheet from oven and place a slice of cheese on top of each muffin. Return to oven for another 4 or 5 minutes, until cheese melts. Remove from oven and press some of the toasted walnuts into the melted cheese. Serves two. |
