Oatmeal Apple Muffins
Barb: I like to put the nuts on top of the raw batter. That way, they get nice and toasty during the baking. Yum!
3/4 C milk or Silk Pure Almond
1/3 C Coconut Palm Sugar
3 tablespoons melted butter, cooled
1 apple, pealed and chopped
3/4 C raisins or dried cranberries
1/2 C chopped pecans or walnuts
1 C whole-wheat flour or whole-wheat pastry flour
1 C quick-cooking oats
1/4 teaspoon salt
1 T. baking powder
2 teaspoons cinnamon
Preheat oven 375°. In a small bowl, beat together egg, milk, Coconut Palm sugar and butter. In a large bowl, combine remaining ingredients, except for the nuts. Fold egg mixture into dry mixture, stirring just to moisten. Fill oiled muffin tins. Distribute the nuts on top of the batter. Bake 15 to 20 minutes. Makes 12.
