Oatmeal Muffins
Ingredients:
1 cup quick-cooking oats 1 cup whole wheat pastry flour 1 cup buttermilk 2 tablespoons olive oil 2 tablespoons butter, melted 1 egg, beaten ½ cup coconut palm sugar 1 teaspoon baking powder ½ teaspoon salt ½ teaspoon baking soda ½ cup blueberries, optional Spray muffin tin with cooking oil. Preheat oven to 400˙. Combine buttermilk, oats and whole wheat pastry flour, butter and olive oil. Allow to soak for 15 minutes. Stir in egg. Combine remaining dry ingredients then stir into buttermilk mixture. Stir in blueberries. Divide batter evenly into pan. Bake 15 to 17 minutes. Allow to cool in pan for 5 minutes. Handle with care – the muffins will be very tender. |
