P.F. Chang's Copycat Lettuce Wraps
I’ve been buying the “Living Lettuce” head of Boston lettuce. You know, the one with the roots intact. If you find the leaves are not large enough to make a wrap, just rename your dinner “Lettuce Cups”, eliminating the frustrating task of rolling a crisp piece of lettuce around a filling that is bound to escape.
2 chicken breast halves, roasted and cut into small pieces. To roast, see our recipe for blackened tacos, choosing the spices that you prefer for coating the chicken
1 small carrot, diced or grated
½ red bell pepper, chopped, raw or roasted
water chestnuts, sliced
Stir these sauce ingredients and mix with above ingredients:
1 tablespoon Bragg Liquid Aminos or low sodium soy sauce
1 clove garlic, minced
3 tablespoons apricot or peach Simply Fruit Preserves
2 tablespoons apple cider vinegar or rice wine vinegar
red pepper flakes, if desired
1 teaspoon hoisin sauce
toasted sesame seeds
chopped peanuts or toasted almonds
After all ingredients are combined, you can heat or leave at room temperature. Spoon into the lettuce leaves, sprinkle with chopped nuts and add topping sauce.
1/2 teaspoon olive oil
1/4 teaspoon minced ginger
1/4 cup peanut butter, smooth or crunchy
1/8 cup soy sauce choice as above
1/2 cups water
Combine first 4 ingredients. Gradually add water, stirring until smooth.
Makes 4 servings.
