Tabouli Stuffed Tomatoes
Barb: Tomatoes, just snatched from our garden, and Siti’s Tabbuli: The idea of combining the two makes me giddy! The perfect lunch. Our tabouli recipe, shared by our friend Lacey, is an authentic Lebanese recipe. The addition of fresh mint and just a touch of cinnamon and cumin, gives the salad a very rich flavor.
Make up a batch of Siti’s Tabbuli and chill. Clean and core the tomatoes and stuff them to the brim. Garnish with fresh mint.
I’ve added garlic pita for our lunch. Just slice multi-grain pita bread, spritz with extra virgin olive oil and sprinkle with garlic salt. Place on a cookie sheet and bake at 325˙ for about 10 minutes.
