Tomatoes in Tuscany
The sweet flavor of slow-roasted tomatoes, a hint of cream cheese...all on top of a whole grain bagel, toasted to perfection. Just close your eyes and imagine that you're dining on the patio of a Tuscan villa…
Did you know that cooked tomatoes are better for us than raw ones? Yes! They are high in lycopene, a powerful cancer-fighting agent.
You simply have to try this: slow roasted cherry tomatoes, playfully
circled up on a toasted whole-wheat mini bagel, lightly spread with cream cheese.
Preheat your oven to 225°. Cut cherry tomatoes in half. Put some olive
oil in a plastic bag and add the tomatoes. Toss until coated with oil.
Place the tomatoes on a parchment lined baking sheet and roast for 2 to
2 ½ hours.
The roasted tomatoes freeze well.
