Veggie Burgers
1 cup old fashioned oats
2 slices multi-grain bread, torn to small pieces 2 ½ tablespoons flax meal ½ cup warm water 1 tablespoon olive or grapeseed oil ½ cup onion, diced 1 garlic clove, minced 1 cup portabella mushrooms, diced 1 cup cooked black beans, rinsed and drained (low sodium preferred) 2 teaspoons balsamic vinegar 2 tablespoons worchestershire sauce 1 teaspoon oregano Salt and pepper Preheat oven to 360˙. Place oats and multi-grain bread in medium bowl of food processor. Pulse to crumbs. Place flax meal and warm water in with oats and bread. Pulse to mix. Allow mixture to rest while you heat the 1 tablespoon olive or grapeseed oil in a skillet. Add onion and sauté until wilted. Add garlic and mushrooms and sauté until tender. Set aside. Add the sautéed vegetables and remaining ingredients to the food processor bowl. Pulse until mixture is fairly smooth, scaping sides occasionally Slightly dampen hands and form mixture into patties. Place on parchment paper lined sheet pan and bake for 30 minutes, turning at 15 minutes, or until exterior of patties is crisp. Burgers could also be cook on the grill. Makes 6 Veggie Burgers |
