Zesty Rice is Nice Salad
Chock-full of tasty cancer-fighting ingredients, this salad is perfect with salmon or served as a main course.
1 cup blended wild and whole grain brown rice (Lundberg Wild Blend, found at Walmart)
1 tablespoon butter
3 tangerines: peeled, piths removed, segmented
½ cup red grapes, cut in half
½ cup pecans, toasted if desired
¼ cup dried cranberries
1 scallion, sliced
½ teaspoon ground black pepper
2 tablespoons pomegranate or orange juice
2 tablespoons olive oil
1 tablespoon balsamic vinegar
Prepare rice according to package instructions, adding 1 tablespoon of butter. After cooking is complete, remove rice from heat and, leaving lid on pan, allow rice to sit for 10 minutes.
Add remaining ingredients while rice is still warm. Place mixture in a serving bowl. Can be served at room temperature or chilled.
For zestier flavor, add more balsamic and/or juice.
